I am a big fan of everything pumpkin way before the millennials hash tagged and called it basic. Pumpkins are my go-to fall decoration and treat. This month I am sharing FOUR healthy pumpkin recipes that I make on repeat at home. Kicking it off is everyone’s favorite energy bites!
This was the first time using Simple Truth plant based vanilla protein powder and I have to say, I am really impressed! I have not found a vanilla protein powder I like as much as Shakeology. Not only is this one less money but also conveniently located at my local grocer. In addition to pumpkin pie seasonings I also added golden raisins for some extra texture.
My son was not a fan of the pumpkin spice but the rest of the family ate these up that I know to make a double batch moving forward. But isn’t that the case with all energy bites? They go by so fast in my house that I’m making a new batch every week.
If you enjoy pumpkin spice whip these up this weekend for a little treat. They would be really great with mini chocolate chips instead of the golden raisins! Also, I probably added more pumpkin spice than the recipe calls for; I’m heavy handed when it comes to cinnamon. Feel free to flavor to taste- after all you have to eat them, not me!
Pumpkin Spice Energy Bites
Easy no bake pumpkin spice protein energy bites!
Ingredients
- 1/4 cup Pumpkin Puree
- 3/4 cup Dry Oatmeal
- 3/4 cup Nut Butter
- 1/4 cup Honey
- 3 scoops Plant Based Vanilla Protein Powder
- 1 tbsp Ground Flax Meal
- 2 tbsp Golden Raisins
- 1/2 tsp Pumpkin Pie Spice
- 1/2 tsp Cinnamon
Instructions

Mix all ingredients together until a sticky dough is formed then roll into balls. Refrigerate for one hour before serving and up to two weeks in an air tight container.
