Pumpkin Chocolate Chip Cookies

Pumpkin Chocolate Chip Cookies

soft, chewy with less sugar!

Ingredients

  • 2 cups flour
  • 2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/8 tsp ground clove
  • 1 tsp vanilla extract
  • 1/4 cup softened butter
  • 1/4 cup melted coconut oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup pumpkin puree
  • 1 egg
  • 1 1/2 cup dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper. 

  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves and salt. Set aside.

  3. Using a mixer, blend sugars, butter and oil until creamy. Blend in egg, pumpkin and vanilla.

  4. Slowly add flour mixture to wet ingredients until all dry ingredients are mixed well with wet.

  5. Fold chocolate chips into batter.

  6. Using a cookie spatula or spoon, drop batter into 2 inch circles on prepared baking sheet.

  7. Bake for 11 minutes.

  8. Cool and enjoy!
